Here is a dish that you can serve over rice, pasta or your favorite veggie. I cooked it today and served it over green beans. You can also add capers or arugula instead of spinach. Of course, Devin’s Kickass Cajun Seasoning makes it extra zesty!


Shrimp Scampi

Ingredients

  • 2 cloves garlic, sliced
  • 1 pound medium shrimp, peeled and deveined
  • Kosher salt and pepper
  • 1 cup dry white wine (such as Sauvignon Blanc)
  • 1 5-ounce package baby spinach
  • 2 tablespoons unsalted butter
  • 1 28-ounce can diced tomatoes, drained
  • 1 tablespoon fresh tarragon, chopped
  • 1 tablespoon fresh tarragon, chopped
